Low Carb Cabbage and Bacon Saute

Ingredients
  

  • 1 medium-sized green cabbage
  • 6 slices of bacon, diced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp red pepper flakes (optional, for some heat)
  • 2 tbsp apple cider vinegar
  • Salt and black pepper to taste

Instructions
 

  • Preheat Pan:
    Heat a large skillet or frying pan over medium heat.
  • Cook Bacon:
    Add diced bacon to the pan and cook until crispy. Remove bacon from the pan and set aside, leaving the bacon grease in the pan.
  • Sauté Vegetables:
    In the same pan with bacon grease, add olive oil and sliced onions. Sauté until onions are translucent, about 3-4 minutes.
  • Add Garlic and Cabbage:
    Stir in minced garlic and thinly sliced cabbage. Cook for 8-10 minutes or until the cabbage is tender-crisp, stirring occasionally.
  • Season:
    Season the cabbage mixture with salt, black pepper, and red pepper flakes (if using). Adjust seasoning to taste.
  • Deglaze with Vinegar:
    Pour apple cider vinegar over the cabbage mixture and stir to combine. Allow it to cook for an additional 2-3 minutes, allowing the flavors to meld.
  • Add Bacon:
    Stir in the crispy bacon that was set aside earlier, ensuring it is well distributed throughout the cabbage.
  • Serve:
    Once the cabbage is tender and flavorful, remove the pan from heat. Transfer the sauté to a serving dish.
  • Garnish (Optional):
    Garnish with fresh herbs like parsley or chives for an extra burst of flavor.
